I have been wanting to try Goop.com recipe for salted chocolate avocado cookies. The combination of avocado and chocolate is very interesting to me, also baking with avocado is something that I have been wanting to explore. This recipe was simple and took little time to make. The avocado added a smoothness and replaces the saturated fats. It almost tastes like a brownie in a cookie form! The rich dark chocolate flavor is very present but the added salt flakes are what really makes this cookie delicious and special.
Cookies Fulfill My Sweet Tooth
So If you have a sweet tooth or a thing about chocolate, this cookie is for you! I would definitely bake again with avocado and next time I will replace the Spelt flour with Almond flour to make them gluten-free! If avocados are your thing, checkout my Paleo Baked Egg Avocado (Greek Style).
Ingredients
- 1/2 Cup of dark chocolate chips
- 3/4 Cup of spelt flour
- 1/2 Cup of avocado smashed
- 1/2 Cup of coconut sugar
- 4 Tablespoons softened unsalted butter
- 3/4 Teaspoon baking powder
- 1/2 Teaspoon of kosher salt
- Flaky salt for sprinkling
Instructions
Cream butter, avocado and coconut sugar in a mixer
Whisk spelt flour, cacao, baking power, and salt in a separate mixing bowl
Combine all the dry ingredients with the wet
Stir in chocolate chip
Place dough in wax paper
Refrigerate for 30 mins
Place tablespoon size cookies on parchment paper
Wet your finger to press the dough down
Sprinkle with flaky salt
Bake at 350 for 15 mins
Notes
Tip: Don't forget to wet your fingers when you press down the dough. I love the idea of savory and sweet so adding the flaky salt really adds flavor Pick a ripe avocado, it helps with the smoothness
