Visiting Santorini is one of the highlights of visiting Greece. The island is famous for tomatoes, Greek wine, capers and my favorite, Santorinian Fava Bean Dip. Even from just browsing photos, everyone is aware of its majestic qualities and natural beauty. Visiting Santorini in person will take your breath away.
The local people (who are lucky enough to live on Santorini!) like to say God created the romantic island on his best day! And I agree — the icy blue waters, the sand ranging in all colors: tar black, clay red, and shell white, and the stark-white washed buildings within the coastal lines… They cannot be replicated anywhere else in the world. It is truly a magical island!
Bringing it Home
On gloomy Michigan days, I like to recreate meals that remind me of relaxing on Santorini. Feeling the warmth of the sun while strolling through the markets. Most of the restaurants and taverns on the island will serve you the fava bean dip with bread before your meal. This is a great addition to your mezza platter while entertaining this summer! Ingredients
- 2 Cups of fava beans
- 2 Cloves of garlic
- Kosher salt to taste
- Black pepper to taste
- Juice from 1 lemon
- 1/4 Cup of good extra virgin olive oil
Instructions
Wash beans
Place beans in water and boil until mushy
Take off the stove and strain
Place in the food processor add garlic, lemon juice, salt, pepper and olive oil
Process until smooth
Transfer to a bowl and pour extra virgin olive oil on top and sprinkle with red onion or walnuts
Notes
If you make the dip ahead of time and refrigerate, it is important to add more olive oil and lemon juice and mix, also let the dip get to room temperature.
